8 large brown mushrooms 
8 green chives
8 Green Pitted Olives
8 Oven Roasted Tomatoes SEE BELOW
8 Sprigs of Coriander
100g Feta Cheese
Sprinkle of Virgin Coconut Oil
Imbali Blends Pepper Salt

Wipe the mushrooms and cut out stems.
Chop stems into very small cubes (brunoise) and place into a bowl;
Chop, tomatoes, chives, coriander and olives and place into a bowl;
Crumble Feta into the bowl and sprinkle VCO and Imbali Blends Pepper Salt into the mixture;
Spoon mixture into the mushrooms;
Bake for approximately 20 minutes at 180 degrees C.
Serve with baked potato and a lovely green salad.
